Kitchen Supervisor

The Kitchen Supervisor will co-ordinate and optimize all operations of the kitchen and manage the staff within this department. The Kitchen supervisor is supporting the deliverables of a health facility to ensure the provision of nutritious meals in accordance with health guidelines and oversight.
JOB REQUIREMENTS
- Serve as a positive role model.
- Complete all reports and documentation as required.
- Report to Facilities supervisor and Finance manager.
- Ensure the smooth running of the kitchen at all times.
- Ensure safety checks of equipment and resources are carried out at all times.
- Establish an appropriate relationship with patients and all staff at all times.
- Communicate at all levels including at the level of the children’s (patients’) understanding.
- Maintain equipment and resources and ensure safe storage thereof.
- Prepare well balanced, nutritional menus.
- Follow special dietary requirements received from the health department and/or the dietitian
- Set up a schedule and ensure adherence re: timing of delivery meals.
- Set up staff duty roster and delegate tasks as required
- To ensure that the hygiene of the kitchen area meets all the legal requirements.
- Set up a cleaning roster and ensure adherence
- Staff management:
- Participate in induction, on-the-job training and development of staff
- Ensure all staff understand and adhere to relevant operational protocols and procedures.
- Initiate disciplinary measures as required.
- Ensure communication forums are instituted to allow for information sharing up and down the line.
- Manage staff performance on a day-to-day basis and ensure that 2 formal performance appraisals take place per year for each staff member.
- Manage stock within the kitchen area.
- Oversee the ordering and purchasing of provisions.
- Ensure that donations of food are received correctly.
- Ensure that stock is stored and maintained on a FIFO basis.
- Ensure that a waste management system is in place and maintained.
- Required to work shifts which may include some weekends and public holidays.

Qualifications
- Must have a HACCP qualification
- Hospitality qualification an added advantage
Required Experience
- Must have at least 3 years of managerial experience in a similar environment.
- Must have at least 2 years menu and hospitality experience.
- Experience in the Health sector would be advantageous.
- Knowledge of DOH (Department of Health) menu guide lines would be an advantage.
